Canning dill pickles fresh from the garden

Hello dear blogging friends.  How are you?  Our garden has put out an abundance of cucumbers this year so I am canning pickles.  I canned 11 quarts!

We're a big dill pickle family!  I will probably can more before the summer is over.

I want to show you our zinnias.  These I started from seeds and they finally bloomed.

I brought them inside where we can enjoy them.

Have a good week!

The July garden

Our garden is growing beautifully this year.  I guess it's because of all the rain we've been having here in North Carolina the last few weeks ~ just really hot humid weather.  We are harvesting tons of tomatoes, cucumbers and banana peppers, so much basil we can't eat it all, and it looks like we will have a lot of egg plant.

Loving those fresh tomato, lettuce and mayo sandwiches.

I am planning on canning tomato sauce and dill pickles probably next week.

We are truly enjoying the fruits of our labor!

Have a great day!

....as visions of tomatoes danced in her head

Last night before going to bed I got the coffee ready for the morning and then glanced around the kitchen in the darkness at all the tomatoes...lots of tomatoes. Our garden has been good to us this summer and for that I am thankful.

~ Goodnight tomatoes...Goodnight kitchen...

Off to bed....thinking about tomatoes.....dreaming about tomatoes....

and this morning I got up bright and early and canned tomatos. Tomato Juice.

I sterilized the jars last night and got everything ready. This morning as I was preparing the tomatoes, wonderful memories of my mother came back. I would help her every summer with the canning.

I always loved seeing all the jars lined up on the shelves in the pantry when we were finished. It gives one a feeling of accomplishment and self-satisfaction.

I hadn't canned in years but going through the whole process today made me want to do more, which I think I will.

It's the greatest thing to open a jar of summer freshness in the middle of winter!

Enjoy your day!
